When I made my cream pies, I was left with seven egg whites.
Last night I made meringue cookies with all those egg whites. Mint meringues with chopped chocolate mixed in. They were delicious but delicate. I had kind of hoped to save some, but they are all eaten except a couple left for Ron to sample. And the kids are begging for those ones. We did send a few over to the neighbors before they were all eaten.
Next time I will make them smaller, and hopefully they will be a little more sturdy, less melty in the middle.
